Potato Pasta (vegan & gluten-free)

Potato Pasta! How did i not think of that before?! 

Actually, it wasn't even me who came up with this idea but rather my potato-loving boyfriend, who saw me using my spiralizer to make some Carrot Pasta and then sweet-talked me into making his potatoes into pretty spirals. 

Yep. And so it happened. Spaghetti made from potatoes! Just spiralize, season and bake them. Still need a good tomato sauce recipe though...

Coconut Rice Pudding (vegan)

I've been wanting to make Coconut Rice Pudding for a while now, and I've finally come around to do so! If you don't like or tolerate coconut, this is probably not for you, but for all others, try this! It's very creamy and rich, filling and satisfying. 

I ate mine with both applesauce and fresh fruit, and with raspberry ice cream, which was gorgeous because the ice cream caused the fat from the coconut to turn into frozen bits, just like when you put whipped cream on top of ice cream - aah, I love when that happens, haha! This recipe is boyfriend-approved ;)

My Little Garden (Earth Day)

Hey there, earthlings :)

Today is Earth Day (so Happy Earthday i guess, haha!), and in honour of that i will plant a tree today - and also because it's part of my Day Zero Project, task 8 being to "Plant a windowsill herb garden", task 13 being to "Plant tomatoes and or other fruit and vegetables" and task 75 being to "Plant a tree on Earth Day". So why not kill two (or actually three) birds with one stone!

Honey Walnut Ice Cream (raw & vegan friendly)

Quick 3-ingredient ice cream without ice cream maker

Main ingredients: banana, walnuts, honey/agave
difficulty level: easy, fool-proof
serves: 1-2
suitable for: vegan, lactose-free, gluten-free, paleo, raw food, and delicious "even so"

This must be my most recent ice cream favourite! This must also be one of the creamiest whipped up nicecreams (nana ice creams) i've ever made! And the only ingredients are banana, walnut and honey (or agave syrup to keep it vegan). So simple! And so good.

Carrot Pasta with spicy Tomato Sauce

Still in the Easter spirit, i'd like to present to you a truly awesome recipe for carrot noodles! Yes, noodles (ribbon noodles to be exact) made of carrots. And it tastes great! Not like grain pasta of course, but as long as it tastes great, i'm happy :)

This recipe is a variation of Attila Hildman's recipe in his book Vegan For Youth that i got for Christmas this year. I don't really like him to be honest (he seems so self-promoting), but  he does have some pretty cool recipes in there. My favourites are probably the sweet potato fries, buckwheat wrap with bean cream, funky monkey banana muffins, kidney bean burger and the eggplant lasagna. Pretty cool, right?

Maisy ❤ March 2015

A little late because i was on a hiking trip over the weekend, but here it is! Finally, i actually read something again!! AND wrote another short story but that's a whole nother story. This is why i love semester break...

Read: Dance of the Happy Shades: And Other Stories (Alice Munro)

This wonderful book with its beautiful cover marks the beginning of Alice Munro's writing career. First off, I'm not a lover of short fiction per se because I prefer to completely dive into a story for hundreds of pages instead of having to realign with each new short story, BUT! This short story collection has actually attracted my interest, especially my literary interest because her language and her imagery are beautiful. My favourite stories are probably Walker Brothers Cowboy, Boys and Girls, Images, The Office, and Trip to the Coast.

The stories - and that is what fascinated me most - all take place in a dreamy, half-familiar, half-strange small town place that is caught between dream and reality. The context for many of these stories is beautifully encapsulated in these lines from Munro's story The Peace of Utrecht:

»the whole town, its rudimentary pattern of streets and its bare trees and muddy yards just free of the snow… dirt roads where the lights of cars appeared, jolting towards the town, under an immense pale wash of sky.«

Vegan Gluten-free Oatmeal Waffles

What may look like a stack of pancakes is actually my first vegan gluten-free waffles!!

Alright, i'll admit, this wasn't actually my first attempt at making vegan gf waffles, but the very first attempt (last year) was a majestic disaster! I used my banana oatmeal pancake recipe for this, and guess what - it was a mess. Too sticky, too wet - the entire waffle iron was covered in semi-raw dough. Not so much fun cleaning up - and without a treat at the end because no frickin waffles came out of this lousy experiment, haha!

So this time i wanted to play safe and took inspiration from Amy's Vegan Raspberry Pomegranate Oat Waffles which in turn are the result of veganizing an old belgian oat waffle recipe. Anyway, they turned out pretty nice - i could even break apart the separate waffle triangles! - , so i wanted to share the recipe with you!

Okay, I'll admit that a) the weather around here wasn't actually cold enough yet to be wearing a hat and b) it actually belongs to my brother, but what can i say? i just love tacky things like that :)
