Banana Split Oatmeal (vegan)

A while ago I came across a recipe post for banana split cupcakes (not vegan), and it made me thinking: why not turn several dishes into a "banana split"?! And the first thing that came to mind - besides vegan banana split cupcakes - was OATMEAL.

So I ran to my computer and googled "banana split porridge/oatmeal", and surprisingly there were no recipes of the sort that I was looking for! So of course, I had to make one myself :)

This Banana Split Oatmeal is dairy-free, decadent and delicious! This can be eaten either as a healthy dessert for 2, or as a slightly richer breakfast for 1. Goes without saying, I had mine as breakfast for one, hehe.
 
"BANANA SPLIT" OATMEAL

Preparation time: 20 mins
Main ingredients: oats, banana, cherry, cream
difficulty level: easy
serves: 1 - 2
suitable for: vegan, lactose-free, gluten-free, nut-free

Ingredients

Cherry Ice Cream:
1/2 cup frozen cherries (and/or strawberries)
1/2 cup plain soy yogurt (you can use your own homemade soy yogurt)
optional: coconut sugar or other sweetener, to taste (i didn't use any)

Roasted Banana:
1 banana
1 - 2 tsp coconut sugar (or raw cane sugar or brown sugar)
1 tsp vanilla powder

Chocolate Oatmeal:
1/2 cup oats (gluten-free, if gluten is an issue)
1/2 cup oat milk (or any other plant milk)
1/2 cup water
1 ripe banana, mashed
1 - 2 tbsp cacao powder (or some actual dark chocolate)
1/2 tsp vanilla powder (OR 1 tsp maple syrup OR tsp coconut sugar/brown sugar/raw cane sugar)
Pinch of salt
optional: a handful of crushed nuts 

Toppings:
Roasted Banana (see recipe)
Cherry Ice Cream (see recipe)
Soy spray cream
Dark chocolate shavings
1 cherry


Instructions

Preheat oven to 180° degrees.

Ice Cream: Either follow my instructions for banana based cherry ice cream. 
Or place your frozen berries - cherries, strawberries or raspberries - in a bowl or other container and add a bit of soy yogurt. Blend using an immersion blender. You can also of course process them in a blender. Slowly scoop in the soy yogurt as you blend until it reaches your preferred consistency. It should be creamy and smooth. And just look at the gorgeous hot pink colour! Add sweetener, if needed. Set aside in the freezer while you go on to prepare the rest.

Roasted Banana: Cut the banana in half lengthwise, drizzle with coconut sugar and vanilla, pop in the oven for 10-15 min or until golden on top.

Chocolate Oatmeal: Meanwhile, pour oats, oat milk, water and your mashed banana into a pot, keep it on low medium heat, continuously stir until creamy. Add cacao powder, vanilla and a pinch of salt. If you like, also throw in a handful of crushed nuts for some more protein and flavour. Transfer into a pretty bowl.

Top off your chocolate porridge with the roasted banana, a scoop of cherry ice cream, whipped cream, a cherry and some shaved dark vegan chocolate. And whatever else you fancy :)

Of course, the classical key components of a Banana Split are scoops of vanilla, chocolate and strawberry ice cream served between the split banana, garnished with crushed nuts, whipped cream, and maraschino cherry. My oatmeal version contains all of these key components, even though in a different order: chocolate nut oatmeal as the base, topped with a vanilla flavoured split banana, cherry/strawberry ice cream, and whipped cream, chocolate and a cherry on top. Super creamy and delicious! And much healthier than the original recipe of course.
